Romain Cornu’s career
Romain Cornu was born and raised in France. From an early age, he was fascinated by creation and desserts by observing and helping his father, a pastry chef and restaurant owner. During this time, he enjoyed bringing smiles to guests’ faces as he shared his passion for pastry.
At the age of fifteen, he entered pastry school to learn more about chocolate, ice cream and sugar. He moved to Washington DC in 2010, shortly after obtaining his master’s degree in chocolate. He gained his first experience in the USA working for casual and gourmet restaurants, then a patisserie. He was then hired as Executive Pastry Chef by Michelin-starred Fabio Trabocchi. At the end of 2016, he moved to Las Vegas and joined the Wolfgang Puck Group as Executive Pastry Chef at Spago, located in the Bellagio complex, before becoming the hotel’s Executive Pastry Sous Chef a few months later. Romain joined the Hakkasan Group in 2019 as corporate pastry chef for all its restaurants worldwide. Part Michelin-starred restaurant, part casual dining, Romain has found the perfect balance between creativity and quality in his desserts. Constantly improving his masterpieces, he loves to explore new ingredients and flavors.
From pastry chef to world Vice-President and ambassador of gastronomy
In 2021, following the merger of Hakkasan with Tao Group Hospitality, Chef Cornu took on the role of Vice President Global Pastry. His commitment to excellence and his ability to balance creativity with quality made him an ideal fit for this leadership position within the world’s largest dining and entertainment group. By 2022, Chef Cornu was named the global ambassador for Cacao Barry and Mona Lisa, where he continues to influence the future of fine dining pastry worldwide.
Romain is fortunate to make a living from his passion for cooking. He loves to share his commitment to his art with his team and customers, and considers desserts to be a veritable institution.
