INGREDIENTS & PREPARATION

Ingredients

• 2 eggs
• white vinegar
• butter
• 1 sweet potato
• 1 butternut
• 1 red onion
• some radishes
• some Paris mushrooms
• some cashews
• Mount Gay® Black Barrel rum 43%
• salt, pepper
• feta

Step

In a saucepan, poach an egg in hot water with a little vinegar
for about 3 minutes.
Brown butter in a frying pan and add the chopped vegetables
and cashews.
Brown slightly.
Season.
Deglaze with Mount Gay® rum, then flambé.
Put the pan in the oven for 10/12 minutes.
Dressing: Place the vegetables in the centre of the plate, then
the poached egg.
Sprinkle with grated feta.
