The competition will take place on Monday, November 10, at the Vannes Exhibition Center during the 21st edition of the Salon du Chocolat et de la Pâtisserie (Chocolate and Pastry Show).

Compositon of the jury

  • Honorary President: Mr. Tommaso Foglia, Italy’s Best Pastry Chef
  • President of the Jury: Mr. Lionel Lallement, M.O.F. Pastry Chef
  • President of the Working Jury Committee: Mr. Stéphane Glacier, M.O.F. Pastry Chef
  • Jury Members: 17 exceptional chefs, including Michelin-starred chefs, Meilleurs Ouvriers de France, World Champions, Pastry Chefs, Chocolatiers, Cooks, Coffee Roasters, and Baristas.

the challenge

Candidates must present 10 Café Gourmand plates on the theme of flora and fauna.
The Café Gourmand will consist of the following four desserts:

  • 1 dessert made with 64% pure Ecuador Arriba chocolate
  • 1 ultra-creamy dessert with vanilla extract
  • 1 choux pastry dessert with 60% Cointreau and passion fruit
  • 1 ultra-moist and ultra-crunchy dessert made with white almond powder and green pistachios

No containers are allowed except for the plate and coffee cup. On site, candidates must prepare and finish their desserts on plates, accompanied by Ecuadorian coffee provided by the organization.

Scoring

The jury will evaluate five criteria:

  • Work in the workshops
  • Hygiene at work
  • Plate presentation
  • Tasting of pastries paired with coffee
  • Defense of the candidate’s presentation file, which must include the technical sheets for the recipes with an interpretation of the theme.

award ceremony

The award ceremony will take place on Monday, November 10, 2025, at 5:30 p.m. at the Central Podium in Hall B.

The winners on the podium will receive:

  • 1st prize: a trophy, a diploma, and a check for €2,000
  • 2nd prize: a trophy, a certificate, and a check for €1,000
  • 3rd prize: a trophy, a certificate, and a check for €500
