Johnny Chen was on top of the podium at the 2015 Mondial du Pain, much to Taiwan’s pride and joy. A feat repeated by the Taiwanese team in 2018, once again proving his perfect technique to the world.

He particularly likes the scent of Cointreau, which brings a freshness to his creations. In particular, they use Cointreau and St Rémy brandy to soak the dried fruit, which he then incorporates into his breads.
