Sudachi is a Japanese citrus fruit that is harvested green for its acidic juice. Renowned Belgian pastry chef Niek Bossaert, member of the ‘Créateurs de desserts’ association, adds a refreshingly tangy, exotic touch to his dessert of mango, chocolate and sesame, subtly flavoured with Mount Gay rum.
