New recipe published in November’s Le Journal du Pâtissier

This new dessert, which combines hazelnut, orange, mango and passion fruit, is a veritable symphony of flavours! The rich, subtle sweetness of hazelnut contrasts subtly with the acidity of orange, which brings a refreshing, bright touch, underlined by Cointreau, while mango adds an exotic, sunny note, supported by passion fruit with its powerful fragrance and distinctive flavour.

Each bite reveals a new nuance of flavour, a taste experience that we owe to Pascal De Deyne, bronze medallist at the 2011 World Pastry Cup and head pastry chef at Van Dender by Sweet Bakery in Brussels.

A creation in the context of the recent Bruyerre demonstration with which we were partnering.
