Recipe for the traditional king pie with rum

Traditionally made with puff pastry and rum-flavored almond cream, the King Pie is THE emblematic January dessert that delights gourmets. The perfect occasion to gather family and friends around a warm table, it’s much more than a simple pastry: it’s a true symbol of conviviality and sharing.

Puff pastry, an art in itself

The basis of this unique galette is an inverted puff pastry, the result of a meticulous folding and twisting technique described by pastry chef Alexis Bouillet in his recipe, and also featured in the video of his croissants recipe. The combination of thin layers of dough and butter creates the light, airy texture so characteristic of the King Pie.

Delicious, fragrant almond cream

Almond cream, also known as frangipane when mixed with pastry cream, forms the heart of our galette. Alexis Bouillet’s secret is the addition of a unique ingredient: Mount Gay rum. Its subtle, refined fragrance adds an extra dimension to the almond cream, enriching the taste of the almonds.

The bean, the soul of the galette

Tradition dictates that you can’t imagine a galette without its hidden bean. This little figurine, sometimes made of porcelain, sometimes of plastic, is the surprise element that delights young and old alike. Who will become the king or queen of the day and have the honor of wearing the golden crown? The excitement is always palpable at tasting time.

Tasting and sharing

The King Pie is best eaten warm, accompanied by a hot drink such as hot chocolate or fragrant tea. In France, the galette is so popular that it is often served in offices, schools and even neighborhood clubs throughout the month of January. Sharing the galette is a moment of collective joy, perfect for starting the year on a sweet and festive note.
