Winter entremets with meringue and Cointreau cream

1. SPECIAL BASE

Ingredients

16 egg whites
350 g caster sugar
250 g white almond powder
Icing sugar

Step

Beat the egg whites until stiff and fold in the sugar at the end.
Fold in the almond powder with a spatula.
Spread the mixture onto lightly buttered and floured baking
sheets, using a tart ring that has been dipped in warm water.
Remove the tart ring.
Lightly sprinkle twice with icing sugar.
Bake in a low oven.

2. CREAMY FILLING

Your usual recipe flavoured with Cointreau®.
Color with a few drops of carmine.

3. ASSEMBLY

On the first special base, pipe the creamy filling in either rosettes
or spirals.
Sprinkle with a few pieces of biscuit soaked in Cointreau®.
Cover with the second special base.

Son of Rogwald, a chef based in Norway, Rollon was expelled from his country in 860… And so began a fantastic series of adventures worthy of the best Westerns. Rollon was an extraordinary character: a giant of extraordinary strength and daring, feared on the seas.

With a horde of adventurers in his pay, he landed in Scotland and England, defeated the English, pillaged everything in his path, conquered France, sailed up the Seine with his fleet, arrived in Rouen, which he subjugated and made his military base and center of operations. Continuing at the same pace, he defeated the Duke of Orleans who came to meet him, laid siege to Paris, pillaged Bayeux, and kidnapped the daughter of Count Bérenger to make her his mistress.

But the lords formed a coalition: Rollon retreated to Rouen, leaving only ruins behind him. And when Charles the Simple, King of France, offered him peace, the title of duke, the province of Neustria… and the hand of his daughter, Princess Gisèle, he accepted, demanding—in addition—Brittany!

In exchange, he must become a Christian and pay homage to the king. But he refuses to kneel before the sovereign and kiss his foot as required by etiquette. He instructs one of his officers to carry out this task. The officer, furious, grabs the king’s foot and lifts it so high that the king falls backwards… This will be his last act of defiance. From now on, he will take it upon himself to maintain order in his lands and leave a lasting legacy throughout western
France.
