INGREDIENTS

Ingredients

400 g cream 35%
80 g invert sugar
500 g dark chocolate couverture 70%
100 g of butter
50 g Metaxa® 60%

Step

Boil the cream with the invert sugar.
Emulsify with the melted chocolate.
At 35°C, add the softened butter and Metaxa®.
Shape then cover with cocoa powder.
