Nicolas Pierot’s career

Before being pastry laboratory manager for Chocolate Academy, Nicolas Pierot worked in a number of prestigious establishments: Jean-Paul Hévin, George V, Epicure (Bristol Hotel), Barry Callebaut France, the Belle Vie French Gastronomic School in China, Peninsula Hotel in Shanghai…

This French pastry chef, which has carried out a number of consultant missions in Eastem Europe, has won renown through many competitions: in 2012, he won the gold medal in the French Championship of the 42nd Olympiades des métiers – pastry and confectionery category – and the silver medal in the international final in Germany. He was also runner-up in the Junior World Pastry and Confectionery Championship.

Based in Shanghai, he continues to share his know-how through demonstrations and training courses for professionals across the whole of Asia Pacific. Nicolas Pierot is renowned for his technical expertise and creativity which are reflected in his innovative and refined pastry creations.
