The origins of patisserie

The history of French patisserie is rich and fascinating, spanning centuries of tradition and innovation. Each generation of pastry chefs has added its own personal touch, while respecting the foundations laid down by their predecessors.

The roots of pastry-making probably go back 7,000 years, to the Neolithic period. The first cakes were simple mixtures of flour, milk and honey, dried on stones heated by the sun.

It was in the Middle Ages that the distinction between cooks and confectioners was made. Cakes lost their sacred character and became festive delicacies.

Innovations and creations

Here are a few noteworthy creations from past centuries:

– “Le Cuisinier Taillevent” by Guillaume Tirel, known as Taillevent: published around 1495, the first known illustrated cookbook in France.

– “Le Pâtissier Royal Parisien” by Marie-Antoine Carême: published in 1815, an essential reference for pastry chefs that contributed to the evolution of French pastry-making.

– “Le Guide Culinaire” by Auguste Escoffier: published in 1903, he modernized kitchen organization and simplified traditional cooking methods.

To promote pastry and the unique qualities of its liqueur, Distillerie Cointreau published its own collection of recipes during the 20th century: “Les meilleures spécialités françaises et européennes”. These recipes are associated with the territories and characters whose names they bear, linking gastronomy and history. Each recipe is enhanced by the aromas of Cointreau… made using the same production process for 175 years! This timeless spirit has stood the test of time, a true symbol of tradition and modernity.
