Two chefs, a new vision for pastry
Brent Maes and Maxime Gaethofs present PASTRYTECT—a unique consulting concept designed for fine-dining restaurants, bakers, pastry chefs, and caterers. Alongside their day-to-day work at the renowned Ghent-based pastry shop—and our ambassador—Joost Arijs, they are dedicated to developing innovative products and original flavor combinations, drawing inspiration from the worlds of design and architecture.

Maxime and Brent both received traditional training as bakers: Maxime in Hasselt, Brent in Bruges. After their apprenticeships and first professional experiences, their paths crossed in the workshop of pastry chef Joost Arijs, where they still work together: Maxime as a chocolatier, Brent as a pastry chef specializing in Viennese pastries.
Brent’s determination shone through when the coronavirus pandemic interrupted his internship: he refused to give up. In 2020, he joined Joost Arijs’s team, and Arijs became both a mentor and a key driving force in Brent’s professional development.
